UK-based roaster Colonna Coffee has figured out how to get the flavor of a pour-over in an instant coffee. While respected micro roasters around the world have been producing instant coffee — typically made from freeze-drying brewed coffee — for the past few years, most versions still taste like something you'd sip reluctantly on a red-eye. Not Colonna’s. Made with single-origin Ethiopian beans, it’s actually delicious, with delicate floral notes and a tea-like quality. –Kat Odell
